Waterford County Festival of Food
The 3rd Annual Waterford Festival of Food in Dungarvan, Ireland, will take place April 16 to 18, 2010. There’ll be food trails, cookery demonstrations, a farmers’ market and even a cake decorating demonstration.
Here’s a recipe from last year’s Festival of Food:
Slow Roast Pork and Ginger Lettuce Wraps
Shoulder of Pork (bone in) 4/5 kg
Spice Rub:
* 1 tablespoon dried oregano
* 1 teaspoon ground coriander
* 1 tablespoon cracked black pepper
* 1 tablespoon sea salt
* 1 teaspoon paprika
* 1 tablespoon dried ginger
* 1/2 teaspoon cayenne pepper
* 1/2 cup dark brown sugar
Rub the mixture evenly over the pork shoulder. Wrap the pork shoulder in plastic bag to hold the marinade against the skin and marinate overnight (or up to two days).
Roast uncovered for 30 minutes at 400°. Turn the heat down to 250°. Cover the roasting pan and slow roast for 6 to 8 hours until the pork shoulder is very tender and pulls apart easily when probed with a fork.
Take some grated carrot, chopped apple, grated ginger, sliced onion, lime juice and chopped coriander leaves. Mix all these with some shredded pork and roll them in iceberg lettuce or any available lettuce leaves. Serve with sour cream and fresh tomato salsa.
