Allium Opens in February

A new restaurant called Allium opens next month in the Four Seasons Hotel Chicago, 120 East Delaware Place, Chicago, Illinois (map).

“Allium,” which is the Latin name for the family of plants that includes onions and garlic, was chosen to reflect the restaurant’s primary commitment to local ingredients, and in homage to the city of Chicago, whose name comes from the Native American word “Shikaakwa,” or “wild onion.”

Helmed by Executive Chef Kevin Hickey, under whose direction Seasons earned a Michelin star for two consecutive years, Allium will feature farm-to-table, regional American cuisine.

Allium’s seasonal menu will focus on sustainable ingredients. Vegetables will be sourced both from local farmers and from the hotel’s own rooftop garden.

The lunch and dinner menu will be broken down into the categories of Snacks & Breads, Smaller, Bigger, and Mine, reflecting a variety of portion sizes, and will be available throughout the restaurant and adjacent bar.

Allium will be located in the space adjacent to the hotel’s seventh-floor lobby (where the Seasons Bar and Lounge used to be). The new restaurant and bar will be open daily, with breakfast service starting at 6:30 a.m., continuing into lunch from 11 a.m. to 3 p.m. Dinner will be served from 5 p.m. to 10 p.m. Brunch service will be offered on Sundays from 11 a.m. to 3 p.m.
